Abstract
Višnja maraska (P.cerasus var. marasca) autohtona je sorta višnje čije je područje uzgoja sjeverna i srednja Dalmacija. U Zadarskoj županiji značajnije se uzgaja u mjestima Stankovci, Škabrnja, Smilčić, Sukošan, Zemunik i Bibinje gdje postiže odličnu kakvoću ploda. Pogodnost tla i klime osobito topli i sušniji periodi tijekom fenofaze dozrijevanja ploda rezultiraju prinosima visoke vrijednosti u pogledu visokog sadržaja suhe tvari i šećera te specifične arome, koji se kao visoko vrijedna sirovina koristi u prehrambenoj industriji, osobito likera, aromatizirane čokolade, bezalkoholnih sirupa i koncentriranih voćnih sokova, pekmeza i kompota. Ovim radom obuhvatiti će se praćenje fenoloških faza razvoja generativnih organa, s posebnim naglaskom na fenogram cvatnje, te mjerenje kvalitete ploda u punoj zrelosti tijekom vegetacijske sezone 2015. godine. U mjestu Škabrnja na položaju „ Kod bunara“, podignut je manji nasad sa 150 stabala višnje maraske na površini 0,4 h, starosti 15 godina. Kao podloga korištena je rašeljka ( P. mahaleb). Gustoća sklopa u nasadu je 5mx5m, a uzgojni oblik kotlasta vaza. Vrijeme početka, trajanja i završetka svake fenofaze bilježiti će se metodom opažanja. Utvrdit će se početak cvatnje (prvi otvoreni cvjetovi), puna cvatnja (najviše otvorenih cvjetova) i kraj cvatnje (kada su otpale sve latice). Pomološka mjerenja obuhvaćati će mjerenje mase ploda, te širine, visine i dubine ploda (mm).Ukupna kiselost soka (g/l) izražena kao jabučna , odrediti će se titracijom s 0.1 M Na OH. Sadržaj šećera izmjeriti će se refraktometrom

The Marasca cherry ( Prunus cerasus var. Marasca) is autochthonous sort of cherry which is growing in area of north and central Dalmatia. In county of Zadar is significantly growing in places Stankovci, Škabrnja, Smilčić, Sukošan, Zemunik and Bibinje where it reaches excellent fruit quality.The benefit of soil and climate, particularly hot and dry season periods during the growth stages which results with high yields value in terms of high dry matter content and sugar, and specific aroma, which is a highly valuable raw material used in the food industry, especially liqueurs, flavored chocolate, soft and concentrated syrup fruit juices, jams and compotes. With this work ,will be include the monitoring of phenological phases of development of generative organs, with particular emphasis on fenogram flowering, thee measuring the quality of the fruit at full maturity during the growing season in 2015. In the village of Skabrnja in position "Kod Bunara", is raised a small plantation with 150 trees Marasca cherry on the surface of 0.4 h, 15 years old. As a base for cherry is used mahaleb cherry (P. mahaleb). Density in the plantation is 5mx5m, and growth form vase. Start time, duration and end of each growth stages will record with method of observation. It will be determined beginning of flowering (first open flowers), full flowering (most open flowers) and the end of flowering (when they fell off the petals). Pomological measurements will include the measurement of the mass of the fruit, the width, height and depth of fruit (mm) .A total acidity of the juice (g / l), expressed as citric, will be determined by titration with 0.1 M NaOH. The sugar content will be measured with refractometer.
