Abstract Das Ziel dieser Arbeit war die Erklärung der Plurizentrizität als wichtige Eigenschaft der deutschen Sprache und die Untersuchung ihrer Beständigkeit im Wortschatz der Kulinarik. Mithilfe der Bücher „Deutsche Sprache“ vom Autor Werner König und „Plurizentrik“ von Birte Kellermeier-Rehbein wurden Lebensmittelbegriffe ausgewählt, die regionale und nationale Variation aufweisen. Diese Varianten wurden dann theoretisch miteinander verglichen, etymologisch erklärt und regional, bzw. national eingeordnet. Mithilfe von drei Internetkochseiten, jeweils einer für jedes Vollzentrum der deutschen Sprache, wurde dann untersucht, welche Varianten in welchem DACH-Land in Realität am meisten benutzt werden. Die Analyse hat gezeigt, dass Rezepte jedes Landes reich an Variation sind und, dass die Theorie nicht immer mit der Wirklichkeit übereinstimmt, beziehungsweise, dass es, besonders an Grenzgebieten, oft zu Abweichungen und Vermischungen von Varianten kommt, weil es keine klaren Grenzen zwischen zwei Varianten gibt. Das Fazit dieser Arbeit ist, dass diese Vielfältigkeit an regionalen Varianten, die deutsche Sprache sehr lebendig und facettenreich macht, was schon bei einem Blick auf die Speisekarte auffällig werden kann.
Abstract (croatian) Cilj ovog rada bio je objasniti pojam pluričentričnosti kao važno svojstvo njemačkog jezika i istražiti njegovu postojanost u kulinarskom rječniku. Uz pomoć knjiga „Deutsche Sprache“ autora Wernera Königa i „Plurizentrik“ autorice Birte Kellermeier-Rehbein, odabrani su pojmovi iz kulinarstva koji pokazuju varijacije na regionalnoj i nacionalnoj razini. Potom su te varijante teoretski međusobno uspoređivane i objašnjena je njihova etimologija te njihova regionalna i nacionalna podjela. Pomoću tri internetske stranice s receptima (po jedna za svako govorno središte njemačkog jezika) istraženo je koje se od tih varijanti u praksi najviše koriste u kojoj od triju država tzv. „DACH-a“. Analiza je pokazala da su recepti svih triju zemalja bogati varijacijama i da se praksa ne slaže uvijek s teorijom, odnosno da dolazi do odstupanja i miješanja varijanti, posebno na graničnim područjima, jer ne postoje jasne granice između dviju varijanti. Zaključak ovog rada je da upravo ta raznolikost regionalnih varijanti njemački jezik čini vrlo živahnim i bogatim, što se može primijetiti već samim pogledom na jelovnik.
Abstract (english) The aim of this work was to explain the pluricentricity as an important property of the German language and to investigate its constancy in the culinary vocabulary. With the help of the books “German Language” by the author Werner König and “Plurizentrik” by Birte Kellermeier-Rehbein, food terms that show regional and national variations were selected. These variants were then theoretically compared with one another, their etymology was explained and finally they were classified regionally and nationally. Using three internet cooking sites (one for each full center of the German language) it was then examined which variants are used the most in which so-called “DACH country” in reality. The analysis has shown that the recipes of every of those countries are rich in variation and that the theory does not always agree with reality, meaning that, especially in border areas, there are often deviations and mixtures of variants because there are no clear boundaries between two variants. The conclusion of this work is that this diversity of regional variants makes the German language very lively and multi-faceted, which can be noticed with a glance at the menu.
