Abstract
Cilj ovog završnog rada je usporediti kvalitetu maslinovih ulja koja su proizvedena na zadarskim otocima i u zadarskom zaleđu (Zadarska županija) iz malih obiteljskih poljoprivrednih gospodarstava. Provela se kemijska analiza osnovnih parametara kvalitete: udio slobodnih masnih kiselina izražen kao udio oleinske kiseline i peroksidni broj. Prilikom uzimanja uzoraka provelo se anketiranje proizvođača radi dobivanja informacija o berbi i tehnološkom postupku proizvodnje. Statističkom obradom podataka utvrđena je razlika u kvaliteti maslinovih ulja iz dva navedena područja uzgoja. U zaključcima iznijete su smjernice za unaprjeđenje kvalitete maslinovih ulja oba uzgojna područja.

Parallel abstract (English)
The main goal of this final paper is to compare the quality of olive oil which was produced on the islands and rural region of the Zadar county on small family farms. The chemical analysis has been procedured by main parameters of qauility: content of free fatty acids expressed as percent oleic acid and the peroxide value. During the sampling a survey has been procedured in order to get information about harvest and technologic procedure of production. The diffrences in quality of olive oil of this two farming regions has been determined by the statistic analysis of gained data. The guidelines for improvements quailty of olive oil for both farming regions has been indicated in the conclusions.
